Winemaker's Notes:
This wine is made from Pinot Gris grapes grown on a stoney drumlin in Mahone Bay. Very low crop levels of just one cluster per shoot allowed the grapes to ripen despite the late start to the season. The Pinot Noir is sourced from our estate vineyard cropped at just ¼ tonne per acre. The grapes were whole cluster pressed together and the juice fermented dry. After 6 months lees ageing in tank the wine was bottled with a small amount of sugar and yeast for secondary fermentation in bottle. After 30 months of lees ageing in bottle the wine was disgorged and given a small dosage with Pinot Noir to round out the wine and balance the natural acidity.
