Dry, aromatic white wine from 100% Nova Scotia Chardonnay grapes.
This wine was fermented partly in neutral French oak and partly in stainless steel. The oak fermented portion adds roundness and mouthfeel plus a hint of vanilla from the 8 months of ageing in barrel as well as full malo-lactic fermentation. The stainless-steel portion maintains primary fruit and freshness as well as Nova Scotia’s signature briny acidity in the wine with no malo-lactic influence.
