Off-dry frizzante-style (lightly sparkling) white wine blend made from a blend of 100% Nova Scotia grapes
Winemaker's Notes:
This wine was fermented in stainless steel to maintain clean, fresh fruit flavours. The wine was fermented with 5 different yeasts to help build complexity. Components of the wine were fermented dryer to add citrus notes and highlight minerality, while others were stalled with natural sweetness giving complex tropical notes. It was then tank carbonated to 2.45 volumes of CO2 to add a delightful refreshing fizz.
