
Traditional method sparkling made from 100% Nova Scotian grapes. Although technically a Sec wine, this wine comes off dry with bright zippy acidity.
Winemaker's Notes:
The grapes for this wine come from Goose Landing Vineyard located near Truro. 2015 was the third crop from this new vineyard making this a very limited production. (Just 430 bottles were made.) The wine was fermented in a small stainless tank and aged 9 months on lees before being bottled with some yeast and sugar for its second fermentation. After 8 years of bottle age the wine was disgorged and given a dosage of sweet wine to help balance the acidity.
