Off-dry traditional method sparkling made from 100% Nova Scotian grapes.
Winemaker's Notes:
Made in the traditional method from Marquette and Petite Pearl, from three different rocky South Shore vineyards, that was gently pressed then cool fermented in stainless steel. The base wine was aged on the lees for seven months then bottled with a touch of sugar and yeast for a second ferment. It was then aged an additional 12 months on the lees in bottle before disgorge and a moderate dosage.
