
Off-dry traditional method sparkling made from 100% Nova Scotian grapes. Reminiscent of your favorite Lambrusco!
Winemaker's Notes:
Made in the traditional method from Marquette from a vineyard on the South Shore near Mahone Bay. The grapes were gently pressed then cool fermented in stainless steel. The base wine was aged on the lees for nine months then bottled with a touch of sugar and yeast for a second ferment. It was then aged an additional 25 months on the lees in bottle before disgorge and a moderate dosage.
