Dry, stainless steel aged, nine months on the lees single varietal Sauvignon Blanc made from 100% Nova Scotia grapes handpicked from Capehouse Vineyard in Mahone Bay.
This wine was fermented in stainless steel to maintain clean, fresh fruit flavours. The Sauvignon Blanc grapes for this wine were handpicked in Mahone Bay from meticulously managed low yield vines at Capehouse Vineyard. The wine was then aged on the lees for nine months with monthly lees stirring.
